Ingredients
2 ½ cups of wholemeal flour
2 ½ tsp of baking powder
½ cup of coconut sugar
¼ cup of lemon juice
2 tbsp of poppy seeds
1 ½ cups of Cocobella Coconut Yogurt – Natural
1 tsp of chia seeds
1/3 cup of melted coconut oil
1 tsp of lemon zest
Method
Preheat your oven to 165 degrees Celsius and line a shallow baking tray with baking paper.
In a bowl, mix the flour, baking powder, poppy seeds, chia seeds and coconut sugar together thoroughly.
Add in the coconut yoghurt, lemon juice, lemon zest and mix together until combined, followed by the melted coconut oil a little at a time mixing well so it doesn’t solidify on the cold yoghurt.
