@lifewithnourishment – Coconut and Sesame Dressing
Prepare this nourishing dressing to pour over your favourite super salad for your next summer picnic.
Ingredients:
4 tbsp straight up Cocobella Straight Up coconut water
3 tbsp hulled tahini
1 tbsp apple cider vinegar
1 tsp sesame oil
½ tsp ginger paste
1/2 tsp rice malt syrup
¼ tsp garlic powder
Pinch of pink Himalayan salt
Method:
Combine all ingredients in an empty glass jar. Shake well until a creamy consistency. Serve over your favourite salad.
@livewithnourishment has served hers over spinach, shaved carrot, apple, cucumber, broccolini, lentils, tri-coloured quinoa, green onions and topped it with toasted pumpkin seeds and sesame seeds. Yum!
@earthlingsasha – Vegan, Gluten-free, banana and coconut cookies
Vegan, gluten-free, guilt-free, oh my!
Ingredients:
1 flax egg (1tbsp ground flax + 3tbsp water)
1/2 cup coconut flour
3 tbsp oat flour
1 tbsp coconut sugar
3 tbsp desiccated coconut
1/2 tsp bi carb soda
1/4 tsp vanilla
1/2 large banana, mashed
3 tbsp agave
1/4 cup Cocobella Coconut Water – Straight Up
Method:
This recipe makes approximately 14 smallish cookies. To begin, preheat the oven to 180c. Make flax egg and let it sit for 10 minutes. Combine all dry ingredients into a bowl and mix well. Add in the wet ingredients including the mashed banana and flax egg and stir to combine.
Divide batter into balls and flatten on baking sheet, before cooking in the oven for 20mins. Let cool on a rack, then enjoy.
@tynowska – Gluten and dairy free banana pancakes with Cocobella Coconut Yoghurt
These delights will make you wish it was brekkie time all the time!
Ingredients:
Two ripe bananas, mashed
Two eggs
1 tsp cinnamon
1tsp vanilla extract
1/4 gluten free baking powder (optional for more fluff).
Coconut oil (to fry)
Toppings:
Cocobella Coconut Yoghurt
Berries of your choice
Drizzle of Manuka honey
Method:
Blend all ingredients together to form a smooth batter. Heat coconut oil in a non-stick pan, and gently pour your batter in for desired pancake size. Cook until brown on both sides. Serve stacked with layers of Cocobella Coconut Yoghurt, berries and Manuka honey. Enjoy!
@mindful_moose – Falafel Salad with Coconut Yoghurt Dressing
The perfect dish for a warm summer evening
Ingredients:
Ready-made falafels from your supermarket
Hummus
Salad of your choosing
Coconut Yoghurt Dressing:
2 tbsp Cocobella Coconut Yoghurt- Natural
1 tbsp vegan mayonnaise
1/4 tsp mint
1/4 tsp dill
Tiny squeeze of lemon juice
1-2 tsp water, to desired thickness
Method:
To make dressing, blend all your ingredients together until smooth. Prepare your falafels and salad, then top with hummus and your dressing. Quick, easy, delicious!
@home.and.harvest – Vegan Coladas
This cool little beverage is the perfect addition to an afternoon in the sun.
Ingredients:
1 cup chopped pineapple
Scoop of ice
2 tablespoons coconut yoghurt
1 tablespoon vegan vanilla protein powder (@bareblends was used in this batch)
Cocobella Coconut Water – Straight Up – to top
Method:
Blend ice, pineapple and yoghurt. Pour into your favourite vessel and top with Coconut water. Enjoy!
