Cocobella Coconut Yoghurt Savory Dip Duo

Ingredients

Tzatziki Dip

¾ cup cucumber, seeded, peeled, and grated
½  cup Cocobella Coconut Yoghurt, Natural
½  cup raw cashews, soaked
2 tablespoons chopped fresh dill
2 teaspoons extra virgin
1 clove garlic, minced
1 tablespoon lemon juice

Roasted Capsicum Dip

1 cup roasted red bell pepper
½ cup Cocobella Coconut Yoghurt, Natural
1½ cups raw cashews, soaked
¾ cup filtered water
1 small clove of garlic
¼ cup red onion, minced
¾ tablespoon lemon juice

To serve

Dried chili flakes
Avocado, sliced
Cherry tomatoes
Mini-gherkins
Brown rice crackers
Sea salt grissini
Whole baby carrots
Sour dough bread loaf
Fresh figs

Method

To make the Tzatziki Dip, add all ingredients, except the cucumber, to a blender and blitz gently until a creamy texture is achieved. Place mixture in a serving dish and stir through cucumber until well combined.

To make the Roasted Capsicum Dip, add all ingredients to a blender and blitz gently until a creamy texture is achieved. Place in a serving dish and top with chili flakes to taste.

Assemble dips on a platter with bread, crackers, fresh fruit and vegetables. Delicioso!
