Coconut Banana Bread


    Ingredients

    • 2 mashed bananas
    • 1 cup Cocobella Vanilla coconut yoghurt
    • 2 flax eggs (2tbsp flaxmeal mixed with 6tbsp water and let to sit 5 mins)
    • 1.5 cups gluten free oat flour
    • 1/4 cup coconut or brown sugar
    • 1 tsp baking powder
    • 1/2 tsp baking soda
    • Lots of chopped dark chocolate or chocolate chips

    Method

    1. Pre-heat oven to 180C and combine all the ingredients.
    2. Bake for about 40 minutes or until golden brown and a skewer comes out clean.
    3. Serve with your choice of toppings!
