Combine oats, coconut water, chia seeds, maple syrup and vanilla in a bowl or jar, cover and refrigerate for at least 2 hours (overnight is preferable.)
Remove jar from the fridge, and add half a mashed banana to the oat mixture. Roughly blend.
Slice up the rest of the banana, kiwi and berries and layer on top to decorate your Bircher muesli and sprinkle with shredded coconut. Enjoy!
