Coconut Granola and Orange Poached Pears


    Ingredients

    Coconut Granola

    • 1½ cups granola
    • 2 cups Cocobella Straight Up coconut water
    • 1 apple, grated
    • 4 tbsp. Cocobella Coconut Yoghurt – Natural
    • ½ tsp cinnamon powder
    • ½ cup coconut flakes
    • ½ cup slivered almonds

    Orange Poached Pears

    • 2 pears, peeled and halved
    • 3 cups Cocobella Straight Up coconut water
    • ½ orange, juiced
    • 1 tsp. orange zest
    • 1 vanilla pod, scraped
    • 2 star anise
    • 1 cinnamon quill

    Method

    1. To make Coconut Granola, combine all ingredients in a bowl, cover and place in the fridge for one hour or overnight.
    2. To make the orange poached pears, place all ingredients in a small saucepan and bring to boil. Reduce heat to medium-low and cook, partially covered and turning occasionally for 15–20 minutes, or until pears are tender. Remove from heat and place on top of the coconut granola.
